Barbecued Apricots With Honey, Pistachios & Mascarpone

With summer hopefully approaching (despite the recent weather suggesting otherwise), we've been on the lookout for some inspiration for quick, easy, and, most importantly, delicious summer desserts to satisfy those sweet cravings using fruit from your garden. We recently stumbled upon this fantastic BBC Good Food recipe, which brought back memories of a similar dessert we enjoyed on holiday last year. Ever since we returned, we've been eager to recreate it ourselves. Here's how you can bring a taste of that summer right to your garden.

 

Ingredients

6 just ripe or slightly unripe apricots, halved and stoned

3 tsp honey, plus a little extra to drizzle

4 rosemary springs

½ tsp ground cinnamon

3 heaped tbsp mascarpone

Handful pistachios, chopped

 

Recipe

Place the apricot halves, cut side facing up, on the bottom portion of a large piece of foil.

Pour honey over the apricots, then add the rosemary sprigs and a pinch of cinnamon on top. Fold the top part of the foil down, then crimp the edges together to form a tight packet.

Set the foil packet on the barbecue and grill for 3 minutes on each side.

Spoon the mascarpone into a small bowl and sprinkle with half of the chopped pistachios.

To serve, drizzle the warm apricots with extra honey and sprinkle with the remaining pistachios. Serve with the mascarpone on the side.

 

 Tips

An important tip to remember when trying this recipe for yourself, not use perfectly ripe apricots as they will fall apart on the barbecue, it is best to use fruit that is almost ripen.
