Apple and Fennel Salad

Ahead of our Apple Pressing Day on Saturday 15th October, we wanted to share one of Common Coffee’s ‘go to’ salads for the pop up in The Walled Garden. It was a big hit in the summer, and with delicious apples from the garden to add to it now, it’s going to be even more yummy…

Here is how they do it for 2 people.

Ingredients:

Salad

A large handful of Pea Shoots, Lamb Lettuce, or Rocket per person

50g of Sunflower Seeds, Pine Nuts , Walnuts - Roasted

A small bulb of Fennel, sliced very finely (keep the green tops for garnish)

2 crisp apples of your choosing, thinly sliced

Sorrel for the garnish (if you’ve got some)

Vinaigrette Dressing

5 tablespoons of Olive Oil

Salt and Pepper

A dash of Apple Juice

1 tablespoon of White Wine Vinegar

1 teaspoon of Honey

1/2 Lemon Juice

1/2 Lemon Zest


Give the vinaigrette dressing a good shake and pour all over the salad. Serve with a scrummy toastie or something similar. Enjoy!
